Squash the Myth: Not Just for Show

Did you know that many of your fall decorative "pumpkins" are actually edible squash?
Not only are they edible but they're also pretty darn tasty.
My favorite is the Flat White Boer Ford.
Most of them are actually heirloom varieties which means they've been around for a long time! They are tried and taste-tested for sure.
Squash Your Worries, Cook Up Some Joy
I love to cube up the bright orange interior meat with a little olive oil and of course some butter (or a lot) and roast it in the oven until it's tender.
A squashing good meal at Busy Bee wouldn't be complete without a honey drizzle after it comes out of the oven. So very delicious!
Tough to Crack
Do you struggle getting them cracked open?
Just drop them on the concrete a time or two.
They will split right open and then you can manage the smaller pieces.
The reason they're hard to cut open is the outside skin is very thick which will help preserve them for up to a year or more.
Many weigh upwards of 6-8 pounds so you can get a lot of delicious food for a very cost effective price. It freezes well both cooked or uncooked.
